Baked salmon in aluminum foil

Recipe (4 servings) ingredients:

  •  4 salmon filets (skinless)
  • 450g asparagus
  • 1 garlic clove
  • 1 lemon finely sliced
  • fresh dill
  • 2 tbs olive oil
  • salt, pepper

Preheat the oven to 200°C. Place 7-8 asparagus in the center of aluminum foil. Drizzle 1 tbs olive oil over the asparagus and season with salt and pepper. Rinse the salmon fillets and season each side with salt and pepper. Layer each fillet over the asparagus and sprinkle the upper side with 1 tbs olive oil mixed with minced garlic. Top with fresh dill and a couple of lemon slices. Wrap each foil side inward over salmon fillets and then fold in top and bottom of foil to enclose. Bake for about 30 minutes, until salmon is cooked. Serve with boiled vegetables and/or mashed potatoes.

Unwrap and enjoy with a cold glass of white wine !

It is a Crying Shame

There is a lot wrong with society, when you have (in particular) a child feeling the pressure to be thin.

Growing up as a child, I was naturally thin, but I do not remember it being a must. I simply ate home cooked meals (made from scratch) and ran around lot!

I guess times have changed, and there are foods which children have become used to, which were not the norm back in the day, such as fast foods. Treats, yes. Lifestyle, no. Due to this, I cannot blame society entirely. I have always believed, that a child’s start in life begins in the home. But then, this is just my opinion, and I am not trying to tell anyone what they should or shouldn’t do with their children, grandchildren, etc.

It is a crying shame that children should be made to feel like this.

It really is.
