Szechuan Shrimp
A recipe I’d like to try! Thanks The Soup Diva!
- 1 tbsp toasted sesame oil
- 1 lb shrimp, pre-cooked and deveined
- 1 tsp minced garlic
- 1 small jar pimiento (or 1 diced red bell pepper)
- 1/4 cup ketchup
- 1-2 tsp chili garlic paste
- 1 tsp crushed ginger
- Diced scallions to garnish (optional)
Thaw shrimp if needed and dry well. Heat oil and garlic in large skillet on medium-high; add shrimp. Cook until beginning to curl. Add all other ingredients except scallions and stir to combine, coating shrimp; reduce heat to medium-low. Serve when heated through, topped with scallions if desired.
Baked salmon
Baked salmon in aluminum foil
Recipe (4 servings) ingredients:
- 4 salmon filets (skinless)
- 450g asparagus
- 1 garlic clove
- 1 lemon finely sliced
- fresh dill
- 2 tbs olive oil
- salt, pepper
Preheat the oven to 200°C. Place 7-8 asparagus in the center of aluminum foil. Drizzle 1 tbs olive oil over the asparagus and season with salt and pepper. Rinse the salmon fillets and season each side with salt and pepper. Layer each fillet over the asparagus and sprinkle the upper side with 1 tbs olive oil mixed with minced garlic. Top with fresh dill and a couple of lemon slices. Wrap each foil side inward over salmon fillets and then fold in top and bottom of foil to enclose. Bake for about 30 minutes, until salmon is cooked. Serve with boiled vegetables and/or mashed potatoes.
Unwrap and enjoy with a cold glass of white wine !

FRENCH BEAN CHICKPEAS SALAD
Ricotta and Pesto Pizza
At least once a week I try to make pizza for dinner. It is a fairly simple meal that everyone can agree on. The combinations are endless too. It doesn’t need to be the same old red sauce, mozzarella, and pepperoni pizza each time. Get creative! If you can put it on bread it can go on a pizza. I opened the refrigerator and looked to see what we had to put on a pizza. Genoa salami? Ricotta? Spinach? Ooo, fresh mozzarella!
So, I decided to go simple with Ricotta, Pesto, fresh mozzarella and Parmesan.
Verdict:
Even my ricotta hating son liked this pizza. It had enough flavor with the pesto and cheeses that he added a bit more pesto and was thrilled with it. Still didn’t care for the texture of the ricotta but he ate it. It was a good dish because it was so simple to make…
