This is a dish that is perfect for the more vegetable phobic people in your life… It may look like a pile of egg noodles to the untrained eye but in fact half of the noodles are made up of cleverly disguised courgettes and carrots: this is the genius of the spiralizer. I had been somewhat  sceptical of this clean eating device (as why on earth would you want to substitute carbs for vegetables?!?!) but my lovely flatmate got me one for my birthday and I am now obsessed. It is crazy easy to use and the resulting “zoodles” are honestly delicious. You know I love one pan meals. Less pots and pans means less clean up! What I like even more is not having to cook it too. I was away for the day with my daughter while she danced. When we got home my partner had dinner ready for us.

As she was looking around the internet there are tons of recipes and videos for this dish. Some use honey, some use mustard or vinegar. Just pick what will work best for your family. She went very simple with olive oil, fresh lemon, garlic and black pepper.

Verdict:

Well, this actually ended up being two pans to fit all the salmon, asparagus and potatoes she wanted to make. We usually make enough to have four to six servings at dinner and then enough for one or two leftover servings for lunch.

We had this meal with a green side salad.

Baked salmon

Baked salmon in aluminum foil

Recipe (4 servings) ingredients:

  •  4 salmon filets (skinless)
  • 450g asparagus
  • 1 garlic clove
  • 1 lemon finely sliced
  • fresh dill
  • 2 tbs olive oil
  • salt, pepper

Preheat the oven to 200°C. Place 7-8 asparagus in the center of aluminum foil. Drizzle 1 tbs olive oil over the asparagus and season with salt and pepper. Rinse the salmon fillets and season each side with salt and pepper. Layer each fillet over the asparagus and sprinkle the upper side with 1 tbs olive oil mixed with minced garlic. Top with fresh dill and a couple of lemon slices. Wrap each foil side inward over salmon fillets and then fold in top and bottom of foil to enclose. Bake for about 30 minutes, until salmon is cooked. Serve with boiled vegetables and/or mashed potatoes.

Unwrap and enjoy with a cold glass of white wine !
